Line fish flavours and textures

AngelfishVery similar to Snoek. Soft and delicate flavours. Thin fillets.
Bluenose or BluefishLong flaked white fleshed fish. With a fat streak in the skin that gives the meat a beautiful rich flavour.
Cape SalmonAlso known as “Geelbek” in Afrikaans with its direct translation being “yellow mouth”. White meat with a mild game taste.
Cob or KabeljouA very popular South African line fish. Served filleted or whole on the bone. Delicate white meat with a mild game flavour.
DoradoFirm texture and dark meat with a rich game flavour.
KingklipWhite in colour, almost translucent when raw. With a soft crayfish-like texture. Fresh sea flavour, not “fishy” or gamey at all. Goes well with a sauce or Cajun style.
Red RomanThis is a real stunner. Delicate soft white meat with a beautiful thin red skin, usually served whole on the bone. Either with a rich sauce or stuffed with herbs, onions and lemons.
SeabassVery delicate white meat fish. Rich in flavour high in good oils. Meat tends to be very soft in texture.
SilverfishSimilar texture as Kingklip with delicate white meat and a mild flavour. Stunning Moroccan style!
SoleLean white to off-white flesh that is fine textured and mild in flavour. Served on the bone.
SwordfishSimilar texture to tuna, very juicy. Soft with a full, meaty flavour.
TunaDense and firm, meat is tender, full flavoured and flaky. It’s a red meat fish and best served seared with a pink centre.
YellowtailVery similar in colour, taste and texture as Dorado with a little less fat. Firm meat with a strong game flavour.
